He or she, what will the baby be? These pink and blue phyllo treats are perfect for your next gender reveal party. Dipped in candy melts, filled with lemon pie, and topped with fresh fruit - there's no sweeter way to share the news!
Ingredients
  • 1 package (12 ounces) candy melts, blue
  • 1 package (12 ounces) candy melts, pink
  • 4 packages (15 count, each) Athens® Mini Phyllo Shells
  • Pink & blue flower sprinkles
  • 1 package (7.5 ounces) Dr. Oetker Lemon Pie Filling & Dessert Mix
  • 2 large egg yolks
  • 2 1/3 cups water, divided
  • 1 tablespoon butter
  • 90 blueberries
  • 90 pieces of strawberries

Directions
Melt blue candy melts in the top of a double boiler over simmering water until smooth. Remove from heat. Dip the bottom and sides of each mini phyllo shell into the melted candy. Place upside down on a cooling rack to dry. Repeat with 29 more shells. Repeat procedure with pink candy melts and remaining two boxes of mini phyllo shells. Before the candy coating is completely dry, gently press flower sprinkles onto the sides of each mini shell (tweezers are a helpful tool). Prepare lemon filling per directions on box. Cool filling for 5 minutes. Spoon lemon filling into each mini shell and top with blueberries or strawberry pieces.

Tips
For added crispness, preheat oven to 350⁰F. Place empty shells on a baking sheet and bake for 3-5 minutes. Cool and fill. The shells can be dipped in the candy melts up to 2 weeks in advance and once hard, can be stored in airtight containers at room temperature. Fill up to 2 hours before serving. Candy melts and sprinkles are available in most craft stores and bakery supply stores.
